December is the time of year for relaxing and while good food is a festive season essential, it doesn't mean you have to spend hours slaving away in the kitchen. Try this light and tasty Boland Gazpacho that takes minimal time to whip up.

To serve four portions of chilled gazpacho soup you need:

 

Ingredients

½ cup finely diced red or yellow (never green!) pepper

The juice of one small lime or lemon

1/2 cup chopped fresh coriander leaf

½ cup finely chopped fresh mint

1 small red/green chilli, seeded, chopped

2 spring onions, finely chopped

1 cup peeled cucumber, seeds removed

1 cup cherry tomatoes, quartered

4 cups peeled watermelon, seeds removed, blended

1 cup of finely chopped watermelon, seeds removed

2 teaspoons extra virgin olive oil

Optional: one tot of dry white wine

Salt and coarse black pepper to taste

Method

In a large mixing bowl, gently mix all the ingredients, cover and chill for two to three hours.

Remove from refrigerator 15 minutes before serving.

Serve soup in small bowls chilled in the refrigerator.
