It's back-to-school all over the country which means most families are frantically busy covering school books, labelling uniforms and preparing lunches... which leaves little time to get to preparing a decent dinner for the family.
Try this amazing bunny chow recipe from Sasko that's quick, easy and thankfully, also nutritious - and it should send you down memory lane too!
1 packet Sasko Buddy Sesame Special Bread
2 cloves Garlic (chopped)
1 red chilli (deseeded and sliced)
2tsp garam masala
1 can chopped tomatoes
4 chicken breasts (diced)
Fresh coriander to serve (optional)
Put a saucepan on medium heat and add oil, garlic, chilli, garam masala, paprika and salt
Fry for one minute.
Add the tomatoes and cream
Simmer for eight to 10 minutes until reduced and thickened.
Add the diced chicken breasts, stir and cover
Simmer for a further 5 minutes or until all the chicken is evenly cooked through, stirring occasionally.
Halve the mini loaves and scoop out most of the bread, fill with the curry
Serve on plates with a sprinkling of fresh coriander and topped with the left over bread to soak up the delicious sauce.
Alternative: for a lower fat version swap the cream for low fat yoghurt and 1 teaspoon of sugar OR use ½ cream, ½ yoghurt and a pinch of sugar.
Be careful about the heat of the chilli you use – usually the larger the chilli, the milder it is, but ask your green grocer or look at the packet information if you are unsure.
