Picking berries is great fun for the whole family and they make a perfect dessert ingredient, when the first wave of berry feasting is over of course.
There's something very summery and refreshing about a tall glass of bright berries surrounded by a jelly, topped with cream, ice cream or yoghurt with a few nuts sprinkled over the top.
And it's dead simple to make, because even if you don't have fresh berries, you can just open a can or a packet of frozen berries of your choice and you have a delightful dessert in the time that it takes for jelly to firm.
You can use one type of berry if you wish, but an assortment looks and tastes better. You will find mixed frozen berries at most supermarkets these days.
To serve four portions you need:
Ingredients
340g mixed berries
150ml creme fraiche, mascarpone or yoghurt, ice cream or cream
A cup crushed nuts (or grated chocolate)
1 packet jelly
Method
Prepare jelly according to the instructions on the packet and set aside to cool.
Divide cooled jelly between four glasses.
Divide three quarters of the berries between the four glasses of jelly and place in refrigerator to set.
Just before serving top the jellies with the remaining fruit and spoon over cream or topping of your choice.
Sprinkle with nuts and/or chocolate.
