Marinated mint pork chops

To make citrus and mint pork chops you will need:

  • 4 pork chops
  • Rind of one lemon
  • The juice of one lemon
  • 100ml fresh orange juice
  • 1/3 cup finely chopped fresh mint
  • ½ cup coarsely chopped fresh basil
  • 4 cloves of garlic, lightly crushed and finely chopped
  • Black pepper
  • 60ml honey
  • 100ml virgin olive oil

    Mix the marinade ingredients well
    Place the pork chops in a non-metal dish and pour over the marinade
    Cover and refrigerate for at least four hours, but preferably overnight.
    The chops are perfect for a braai or for the oven grill.
    Baste with the marinade while cooking.
    If you don’t want to serve the potato pancakes with the chops then green vegetables or salad, and new or jacket potatoes make tasty partners.
