Orange and Ginger Chicken recipe:

Rub the chicken breasts with a mixture of the orange and ginger rind.
Heat the oil in frying pan and add the chicken. Remove the chicken and place it in a casserole dish.
Fry the mushrooms in the pan with fresh cruched garlic and the cashew nuts, add one glass of white wine and pour this over the chicken.
Bake the chicken for 20 minutes.
Serve with salad or veggies.
